Red Velvet Cupcakes

Okay, so, I have a confession to make. I am obsessed with cupcakes at the moment. I have always loved to bake and this happens to be my new thing to bake as well as search the valley for delicious cupcake bakeries. I have been to a few places but I love So Cupcakes by far the most. I have posted blogs about them before. Anyway, red velvet cupcakes seem to be very popular right now. So Cupcakes is usually sold out by noon. I haven't really understood the fascination. It's red cake. However, it's grown on me. I was finally able to taste So Cupcake's version with cream cheese frosting, thanks to my wonderful husband who called them early one morning and asked them to set one aside for him to pick up after work for me. He's the best! I was hooked almost immediately. However, it's the frosting that's so addicting, in this case. I've had red velvet with buttercream and it just didn't do it like the cream cheese. So now I am trying to find a recipe that I love just as much that I can make at home. I found this recipe and made it this weekend. It's really good, it's moist and has a good flavor, but I think the frosting could be better. I think I'll give Amy's recipe a try. Anyway, here's the finished product.

One of my favorites

I discovered this cute book a while back thanks to Mark's Aunt Ellen. Whenever we go visit Uncle Wayne and Aunt Ellen, Ellen always pulls out some books to read to the kids. This one caught my attention. It's a really sweet story about finding your own happily ever after. With all of our moving around I forgot that I even had it till I was unpacking a few weeks ago. I'm sure many of you have read it but if you haven't you should pick it up on your next trip to the library, even if you don't have kids.

Sleepy in Cedar

We have been going down to Cedar City quite a bit in the last month or so to visit and to get our things out of storage. One weekend while we were there, Lis (my sister-in-law) and I went shopping and left Ethan and Liv with Grandma Janie. When we returned home this was the scene.

This is Caleb. He is David and Lis' first baby. He was born back in November.

Lis and I were just happy that the babies were sleeping and then we found out that everyone was out. My kids don't take naps anymore so I was shocked when I saw this! Janie was joking that she is just too boring these days so the kids nodded off. I highly doubt that but I do love unexpected naps.

Natural History Museum

On the first Monday of every month the Natural History Museum is free so the kids and I have taken advantage that. It's a cool little place. The dinosaur exhibit is their favorite, of course. Liv loves the insect room as well but Ethan has a hard time convincing himself that it's ok to walk in front of the boxes with spiders in them. I must admit that they give me the chills as well! Also, you'll notice in the pictures that Liv was trying out a few poses for the camera. She was asking me how she should stand and where she should put her arms. Oh heaven help me! She is a cutie though. For those of you in the area, you should come with us sometime! It's a fun place to spend an afternoon.

The Shopping Cart

Alright, I am back to blogging. It's so nice to have the internet again. I can't believe how difficult it is to function in life without it these days.

I must admit that last Thursday I was on the verge of having an anxiety attack. Let me paint the picture for you so that you better understand. Me and three kids. Grocery store. Baby in her car seat up in the front of the shopping cart. My cart half full of groceries. Ethan and Liv are playing around and jump on the side of the shopping cart at the same time. The entire cart tips over falling on top of the kids and throwing the car seat up in the air. I look down and see the car seat upside down with Izzy trapped underneath. I can't even explain all of the emotions that I felt. I was surprised that I didn't burst into tears on the spot. I quickly picked up the car seat, flipped it over and pulled the baby out. She is screaming, Liv is still under the cart screaming and Ethan is crying while trying to pull Liv up. Thankfully, one of the dozen people standing there watching this crazy scene comes over to help me. She was the nicest little lady and I completely appreciated her kindness. I left the cart in the middle of the store and left. The kids and I went out to our van and sat while I tried to calm the baby down. I couldn't tell if she was hurt so I started moving her arms and legs around to make sure nothing was broken and looking for bruises as well. I thought about going to the emergency room just in case but Izzy calmed down and didn't seem to be in pain. She had a red bump on her forehead (you can kind of see that in the picture) but it didn't seem serious. Later that night Mark discovered that she would cry whenever we touched her right foot. I took her over to the Urgent Care and had the doctor look at it but she didn't seem to think it was serious. That whole ordeal was one of the worst experiences for me. I wasn't able to sleep that night, just relived the whole thing over and over. I kept telling Mark that I was having chest pains from the anxiety of it all. It really bothered me. So what did I learn? I am not taking all three kids to the store anymore for a very long time. And, leave the car seat handle up (I had just put it down two seconds before) because Izzy's fall might not have been so traumatic if it had been up. Mark was teasing me about the bizarre things that have happened to me and the kids recently - being on a plane with a newborn and two kids throwing up (remember that post?) and the falling shopping cart. Thankfully those things don't happen too often or I would be one frazzled lady.

Simple Update

I have been told by many people that I need to update my blog. I totally agree. However, we just moved (again!) and I don't have the internet at our new place yet. We should be getting it this week so hopefully I will be back to blogging soon. Oh, and I guess I should mention that we are still in northern Utah. We are done with moving around the country for a while. Living out of boxes was making me go crazy!
